Family Friday/ Pinning & Dining Combo: Pumpkin Spice Cereal

I’ve seen several pumpkin spiced recipes floating around on Pinterest lately and I have it on my mind to give one of the DIY Pumpkin Spiced Lattes a try.

Noah has discovered her own pumpkin spiced concoction that she loves.

She’s not one to shy away from bold flavor… earlier this week she fell in love with taco soup.  Pumpkin spiced cereal is so much more appetizing than plain old baby cereal and helps to add a little more variety to their diet.  Plus, spices have lots of great benefits.

For anyone wanting to replicate this yummy goodness for their little one, below is what you will need.

Pumpkin Spice Cereal

  • 1/4 – 1/2 cup Baby cereal (we use Gerber)
  • 1/8 teaspoon pumpkin spice
  • Vanilla almond milk (enough for desired consistency)

I mix everything together and then serve.  Noah likes it cold so I don’t bother heating and having to worry if it is too hot for her.  She loves it!  So spice up your baby’s breakfast with a little pumpkin spice.

Does anyone else have any baby food secrets to share?  I am all for new ones.  Or what yummy foods do you like to add pumpkin spice to for  your taste bud satisfaction?

Pinning and Dining: A New Series

To commemorate Summertime and the love of quick, easy, and delicious meals (or desserts).  I thought I would share some great finds I have found on Pinterest.

This recipe claims to taste just like a Wendy’s frosty and it does not disappoint. ML and I for the most part gave up fast food almost two years ago.  Before that Wendy’s chicken nuggets and frosties were a road trip staple for us.  Let’s just say we still long for a frosty almost every time we pass a Wendy’s. So when I saw this pinned on Pinterest I just had to give it a try.  We prepared it for a pot luck dinner party and everyone loved it.  To give it a healthy touch we used chocolate almond milk, and Whole Food’s version of cool whip.  The change in ingredients worked fine and did not alter the taste.  This has definitely become an ice cream favorite for us.

 

This pasta recipe I pinned from Ashley my friend over at Attempts at Domestication.  She shared this easy go to pasta recipe a few months ago and I just had to try it for ML.  He loved it and I did too because I already had all the ingredients on hand.  Using tomatoes, frozen vegetables, some spices, and a little left over wine this recipe leaves you with plenty of time to enjoy the rest of the night.

This is a fabulous cheesy chicken and rice bake.  I tweaked it a little by doubling the black beans and eliminating the chicken for a vegetarian alternative.  We love black beans, corn, and cilantro.  This recipe has them all and is packed full of flavor.  Who doesn’t love a one stop casserole dish for the Summer?  Pair this with some salad and you have a complete meal!

Sharing all these recipes has gotten me hungry and ready to cook.  I guess that’s a good thing for ML!  I love trying new recipes.  This post begins a new series I am starting titled “Pinning and Dining”.  I hope to share more wonderful recipes I have found or have pinned to Pinterest.  As well as give you real life pictures and comments on how it actually turns out.  I am sure ML will fully support this new series on the blog.

Have you found any new Summer recipes that your family loves?  Do you share our love of frosties?  Does your family have a theme night for dinner on certain nights of the week? (Italian, Mexican, comfort food)  I have thought about implementing this once Noah gets older.

Cooking with Pinterest

Has anybody else like me started searching for recipes on Pinterest? Mainly, I just repin other people’s pins (to everybody I follow, you have great taste). Unlike the crafts and design ideas I have found on there, I have actually cooked some of the pinned recipes. I thought I would share a few with you. These are easy, go-to recipes.

Chili’s Southwestern Egg Rolls with Avocado Ranch Sauce

The website suggests this as an appetizer, but I turned it into a meal simply by pairing it with some rice… Mexican rice would be great. This was my first attempt at making egg rolls. For anybody wondering (that would have been me), egg roll wrappers are found in the produce section near the mushrooms and salad dressing. This is a great meatless meal, but shredded chicken could easily be added to the mix for those meat lovers out there. These egg rolls are baked not fried, so it’s perfect for anybody still sticking to their new year’s resolution to eat healthier and lose weight! My avocado was not ripe enough, so I made the sauce without it. It turned out fine.

Chocolate Banana Treat

I have to confess mine didn’t turn out anything like the picture. Even after two tries, it still didn’t look like the picture. But it tasted great… that’s what counts. Ours ended up looking more like chocolate pudding. This is the perfect, healthy dessert for my banana-loving husband and this chocolate-craving wife! At 110 calories who can resist?

Zucchini with Roma Tomatoes and Basil

They suggest this as a side, but I turned mine into the main dish just by placing it on a bed of pasta and fixing corn as the side. The zucchini was so juicy and full of flavor… this is definitely a recipe I will use again. Any good meaty tomato will work. Whole Foods didn’t have any Roma Tomatoes. So I bought the least expensive ones I could find, and they worked great. The recipe calls for bread crumbs, but I left them out (packaged bread crumbs are a possible source of msg… migraine triggers). And it still tasted wonderful.

One Minute Peanut Butter Cake

This recipe uses common ingredients in your kitchen. I actually had all of them on hand, so I gave it a try the first day I pinned it. I hate to break the bad news… it might take a little longer (allow 5 minutes). That’s a small price to pay to get such a yummy dessert though. A mixture of peanut butter, chocolate and a few other goodies are poured in a ramekin (or bowl) and zapped in the microwave for 30 seconds. That’s right! Thirty seconds and you have a cake, a delicious cake at that. My husband couldn’t believe it. Unlike the chocolate banana treat, this recipe is for days when you feel like splurging, or you can split it (that’s what we did).
